Traditional Tuesdays

I continue to be convinced that the dietary guidelines recommended by the Weston A. Price Foundation (WAPF) are the way to go for my family. We all feel really good and are enjoying what we are eating. DH made a point to pull me aside this week and say to me that he is really happy the way we've been eating. So, we press on.

Here is my favorite recipe from this last week:

Coconut French Toast

Bread (whatever you like to make French Toast out of, WAPF would recommend sourdough or sprouted grain)
1/2 can of whole coconut milk (look in the asian food section at the supermarket)
4 eggs
cinnamon to taste
1-2 teaspoons of vanilla

So most people who cook know how to make french toast. You make this the same way but use 1/2 can of coconut milk instead of milk. Note that you will have to mix up the coconut "cream" with the coconut milk and heat it just a bit so the "cream" melts into the "milk". If you pop it in the microwave for a few seconds it will become liquid. Anyway, by adding coconut milk to french toast you are adding tons of healthy nutrients to this breakfast dish! Also, I make a "Berry Syrup" to cut down on the amount of sugar we eat on pancakes and french toast. It's a piece of cake to make. Just heat 1/2 bag of frozen mixed berries and add enough syrup to cover the berries. You can blend it in a blender if you like or just top the pancakes/french toast/waffles with it after heating. Note: It's a bit messy. Make sure your little ones are wearing clothing that can get berry juice on. Or cover them up well with a BIG bib!!!!

Hey Abby,
I do not know what kind of syrup you use, but if you do not use it, have you thought of using real 100% maple syrup, from a maple tree? You can get it at places like Trader Joe's or you can order it. It still a sugar, but it is a natural sugar, no refined sugar added. Seems it may be in-line with your new eating patterns. Just food for thought... :oD

I agree! I always use 100% maple syrup. Much healthier and tasty too!
